Red Hot, Cold Day
Saturday dawned with a biting chill, the kind of wind that bites through layers of clothing. Gus, our Horticulturist and Farm manager, a man with a keen wit and a gift for everything green, busied himself in the kitchen, crafting our farm's fiery homemade chilli sauce. Freshly-picked apples from our very own trees, sugar, apple cider vinegar and long green thai chilli’s, not too hot but with a pleasant kick. Our conversation turned to the winter ahead and our plans to build a greenhouse.
As Gus expertly handled the fiery chillies, he inadvertently rubbed his eyes, post-chopping, suffering the consequences with a hearty laugh. Annie, our inquisitive Parson's terrier, and Minnie ;the queen of the dogs but only the size of a small rat, observed the scene with fascination, heads cocked to one side, as if attempting to glean the secrets of the universe in the chilli…or perhaps just hungry.
The rhythm of the day ebbed and flowed and sharp bite of chilli cooking made the air thick and caustic, resulting in us throwing open the windows to the misty day but this simple chilli sauce bubbling away on the stove serves as a testament to the farm's devotion to sustainability and our profound connection to the land.
